Ingredients:
For the Sauce (you can use a pack of the Jajangmyeon buldak sauce or make it with this recipe:
2 tablespoons vegetable oil
1/4 cup diced onion
1/4 cup diced zucchini
1/4 cup diced carrot
1/4 cup diced bell pepper (any color)
3 cloves garlic, minced
2 tablespoons black bean paste (chunjang)
1 tablespoon gochujang (Korean red pepper paste) or more for extra spiciness
1 tablespoon tamari sauce
1 tablespoon monkfruit
1/2 cup chicken or vegetable broth
1/2 cup water
For the Noodles:
1 pack of Zero noodle or Shiritaki noodle of choice
For the Toppings (Optional):
handful of king crab balls
1/4 cup thinly sliced cucumber
1 soft boiled ramen egg, halved
Roasted sesame seeds
Sliced green onions
mozzarella cheese
Instructions:
Prepare the Sauce:
Heat vegetable oil in a large wok or skillet over medium-high heat.
Add diced onions, zucchini, carrots, and bell peppers. Sauté for about 3-4 minutes until they become slightly tender.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the black bean paste (chunjang) and gochujang. Mix well until the vegetables are coated with the sauce.
Rinse and Cook the Noodles:
In a separate pan, bring two tablespoons of water to a simmer, rinse your shirataki noodles under cold water and then sauté in the pan.
Finish the Sauce:
Stir in tamari sauce and monkfruit into the vegetable mixture.
Pour in the chicken or vegetable broth and water, and let the sauce simmer for about 5 minutes, stirring occasionally, until it thickens slightly.
Combine the Noodles and Sauce:
Add the cooked noodles to the sauce and toss until the noodles are evenly coated with the black bean sauce.
Serve:
Divide the buldak jajangmyeon noodles among serving bowls.
Top with shredded cabbage, sliced cucumber, boiled eggs, roasted sesame seeds, and sliced green onions, if desired.
