Low Carb Jajangmyeon





Buldak Jajangmyeon" is a popular spicy Korean black bean noodle dish. When you are living a low carb life you tend to miss things like instant noodles. Well fear no more here's a recipe for you to enjoy this delicious and fiery dish:





Ingredients:

For the Sauce (you can use a pack of the Jajangmyeon buldak sauce or make it with this recipe:

  • 2 tablespoons vegetable oil

  • 1/4 cup diced onion

  • 1/4 cup diced zucchini

  • 1/4 cup diced carrot

  • 1/4 cup diced bell pepper (any color)

  • 3 cloves garlic, minced

  • 2 tablespoons black bean paste (chunjang)

  • 1 tablespoon gochujang (Korean red pepper paste) or more for extra spiciness

  • 1 tablespoon tamari sauce

  • 1 tablespoon monkfruit

  • 1/2 cup chicken or vegetable broth

  • 1/2 cup water

For the Noodles:

  • 1 pack of Zero noodle or Shiritaki noodle of choice

For the Toppings (Optional):

  • handful of king crab balls

  • 1/4 cup thinly sliced cucumber

  • 1 soft boiled ramen egg, halved

  • Roasted sesame seeds

  • Sliced green onions

  • mozzarella cheese

Instructions:


Prepare the Sauce:

  • Heat vegetable oil in a large wok or skillet over medium-high heat.

  • Add diced onions, zucchini, carrots, and bell peppers. Sauté for about 3-4 minutes until they become slightly tender.

  • Stir in the minced garlic and cook for another 30 seconds until fragrant.

  • Add the black bean paste (chunjang) and gochujang. Mix well until the vegetables are coated with the sauce.

Rinse and Cook the Noodles:

  • In a separate pan, bring two tablespoons of water to a simmer, rinse your shirataki noodles under cold water and then sauté in the pan.

Finish the Sauce:

  • Stir in tamari sauce and monkfruit into the vegetable mixture.

  • Pour in the chicken or vegetable broth and water, and let the sauce simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

Combine the Noodles and Sauce:

  • Add the cooked noodles to the sauce and toss until the noodles are evenly coated with the black bean sauce.

Serve:

  • Divide the buldak jajangmyeon noodles among serving bowls.

  • Top with shredded cabbage, sliced cucumber, boiled eggs, roasted sesame seeds, and sliced green onions, if desired.
